Description

A quick and flavorful pasta dish combining shrimp, tomatoes, and spinach with rigatoni.


Ingredients

  • 8 oz rigatoni pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds.
  3. Add shrimp to the skillet. Cook for 2 minutes per side until pink.
  4. Add cherry tomatoes and spinach. Cook until spinach wilts, about 2 minutes.
  5. Toss in cooked rigatoni. Season with salt and black pepper.
  6. Serve topped with grated Parmesan cheese.
