- 1 medium winter squash
- 1 cup shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup shredded cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cut the winter squash in half and scoop out the seeds.
- Place squash halves on a baking sheet, drizzle with olive oil, and roast for 30 minutes.
- In a pan, sauté shrimp and spinach with garlic powder, salt, and black pepper.
- Fill roasted squash halves with the shrimp and spinach mixture.
- Sprinkle shredded cheese on top.
- Bake for an additional 10 minutes until cheese melts.
Notes
- Use any type of winter squash like acorn or butternut.
- Adjust seasoning to taste.
- For a vegan option, omit shrimp and cheese.
