Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 16 oz potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until pink, about 3 minutes per side. Remove shrimp and set aside.
  4. In the same skillet, add spinach and cook until wilted, about 2 minutes.
  5. Pour in heavy cream and bring to a simmer.
  6. Stir in Parmesan cheese, salt, black pepper, and red pepper flakes.
  7. Add gnocchi and cook according to package instructions, about 3 minutes.
  8. Return shrimp to the skillet and toss to combine.
  9. Serve hot and enjoy.
