Description

A delicious and easy-to-make shrimp scampi-style linguine without alcohol. Perfect for a quick weeknight dinner.


Ingredients

  • 8 oz linguine
  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 2 tbsp butter
  • 1/4 tsp red pepper flakes
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook linguine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 1 minute.
  3. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  4. In the same skillet, add chicken broth, lemon juice, and butter. Stir until butter melts.
  5. Return shrimp to the skillet and toss to coat. Add cooked linguine and parsley, mix well.
  6. Season with salt and pepper. Serve immediately.

  • Adjust red pepper flakes to your preferred spice level.
