  • 8 oz spaghetti: cook according to package instructions
  • 1 lb shrimp: peeled and deveined
  • 1 cup ricotta cheese: creamy and smooth
  • 1 lemon: zest and juice
  • 2 cloves garlic: minced
  • 2 tbsp olive oil: for sautéing
  • 1/4 tsp red pepper flakes: optional for heat
  • Salt and pepper: to taste
  • 1/4 cup fresh parsley: chopped

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add garlic and red pepper flakes, sauté for 1 minute.
  3. Add shrimp to the pan and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  4. In the same pan, add ricotta cheese, lemon zest, and lemon juice. Stir until creamy.
  5. Add the cooked spaghetti to the pan and toss to coat with the ricotta mixture.
  6. Return the shrimp to the pan and gently mix. Season with salt and pepper.
  7. Garnish with fresh parsley and serve immediately.
