- 1/4 cup fresh parsley, chopped
Instructions
- Cook penne according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, cook for 1 minute.
- Add shrimp to the skillet, season with salt and pepper. Cook until pink, about 2 minutes per side.
- Stir in ricotta, lemon zest, and lemon juice. Mix well.
- Add cooked pasta to the skillet, toss to combine.
