- 1 cup wild rice, uncooked
- 1 lb shrimp, peeled and deveined
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Rinse wild rice under cold water, then cook it in chicken broth according to package instructions.
- In a skillet, heat olive oil over medium heat. Sauté onion, garlic, bell pepper, and mushrooms until softened.
- Add shrimp to the skillet and cook until pink, about 3 minutes.
- Stir in cooked rice, heavy cream, salt, pepper, and paprika. Mix well.
- Transfer the mixture to a baking dish and sprinkle Parmesan cheese on top.
- Bake for 20 minutes until bubbly and golden.
- Let cool slightly before serving.
Notes
- Use fresh shrimp for best flavor.
- Wild rice takes longer to cook than white rice, so plan accordingly.
- For extra richness, substitute half of the chicken broth with white wine.
