- 8 oz penne pasta
- 1 lb shrimp, peeled and deveined
- 2 cups mixed vegetables, chopped (bell peppers, zucchini, mushrooms)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes, optional
- 2 tbsp fresh parsley, chopped
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp from the skillet and set aside.
- In the same skillet, add mixed vegetables and cook for 4-5 minutes until tender.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
- Add cooked pasta and shrimp back to the skillet. Toss everything together until well coated.
- Season with salt, black pepper, and red pepper flakes if desired. Garnish with fresh parsley before serving.

- Substitute half-and-half for heavy cream if you prefer a lighter sauce.
