Description

A quick and flavorful one-skillet meal featuring shrimp, spinach, and orzo pasta.


Ingredients

Scale
  • 1 cup orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 lemon, juiced
  • 1/4 cup grated parmesan cheese
  • 2 cups chicken or vegetable broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add orzo and stir for 1 minute.
  4. Pour in broth, bring to a simmer, and cook for 8 minutes, stirring occasionally.
  5. Add shrimp, spinach, salt, black pepper, and red pepper flakes. Stir and cook for 3-4 minutes until shrimp turn pink.
  6. Remove from heat, stir in lemon juice and parmesan cheese.
  7. Serve warm.

Notes

  • Use fresh spinach for best results.
  • Adjust red pepper flakes for more or less heat.
  • Substitute vegetable broth for a vegetarian version.
