Description
A quick and flavorful one-skillet meal featuring shrimp, spinach, and orzo pasta.
Ingredients

- 1 cup orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 lemon, juiced
- 1/4 cup grated parmesan cheese
- 2 cups chicken or vegetable broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add orzo and stir for 1 minute.
- Pour in broth, bring to a simmer, and cook for 8 minutes, stirring occasionally.
- Add shrimp, spinach, salt, black pepper, and red pepper flakes. Stir and cook for 3-4 minutes until shrimp turn pink.
- Remove from heat, stir in lemon juice and parmesan cheese.
- Serve warm.
Notes
- Use fresh spinach for best results.
- Adjust red pepper flakes for more or less heat.
- Substitute vegetable broth for a vegetarian version.
