- 8 oz pasta: cooked al dente
- 1 lb shrimp: peeled and deveined
- 2 cups mixed veggies: bell peppers, zucchini, cherry tomatoes
- 3 cloves garlic: minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/4 cup fresh parsley: chopped
- 1/4 cup grated Parmesan cheese
- Preheat your oven to 400°F.
- Toss the mixed veggies with 1 tbsp olive oil, salt, and black pepper. Roast for 20 minutes.
- Heat the remaining olive oil in a pan. Add garlic and sauté for 1 minute.

- Sprinkle with red pepper flakes, parsley, and Parmesan cheese. Toss well.
