Description

Ingredients

  • 8 oz pasta: your choice of shape
  • 1 lb shrimp: peeled and deveined
  • 1 cup roasted red peppers: sliced
  • 1/2 cup Parmesan cheese: grated
  • 2 cloves garlic: minced
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • Salt and black pepper: to taste
  • 2 tbsp fresh parsley: chopped

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds.
  3. Add shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque.
  4. Stir in roasted red peppers and cooked pasta. Toss to combine.
  5. Sprinkle Parmesan cheese over the pasta and stir until melted.
  6. Season with salt and black pepper to taste. Garnish with fresh parsley before serving.
