A quick and healthy meal with shrimp, roasted broccoli, and pasta.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 lb shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F.
  2. Toss broccoli with 1 tbsp olive oil, salt, and pepper. Roast for 15 minutes.
  3. Cook pasta according to package instructions. Drain and set aside.
  4. Heat remaining olive oil in a pan. Add garlic and red pepper flakes, sauté for 30 seconds.
  5. Add shrimp and cook for 2-3 minutes per side.
  6. Combine pasta, shrimp, roasted broccoli, lemon juice, and Parmesan. Toss well.
  7. Serve warm.

  • Use fresh shrimp for best texture.
  • Adjust red pepper flakes for spice preference.
