A quick and flavorful shrimp and mixed veggie pasta primavera that’s perfect for weeknight dinners.

Ingredients

  • 8 oz pasta: your choice of shape
  • 1 lb shrimp: peeled and deveined
  • 2 cups mixed veggies: bell peppers, zucchini, carrots
  • 3 cloves garlic: minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley: chopped

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat.
  3. Add garlic and sauté for 30 seconds until fragrant.
  4. Add shrimp and cook for 2 minutes per side until pink.
  5. Add mixed veggies and cook for 3-4 minutes until tender.
  6. Toss in cooked pasta, salt, pepper, lemon juice, and parmesan cheese.
  7. Garnish with fresh parsley and serve immediately.
