Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • Zest and juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook penne pasta according to package instructions, then drain and set aside.
  2. In a large skillet, melt butter over medium heat.
  3. Add shrimp and garlic, sauté for 2-3 minutes until shrimp turns pink.
  4. Remove shrimp from the skillet and set aside.
  5. Pour heavy cream and chicken broth into the skillet, stirring well.
  6. Add lemon zest, lemon juice, salt, and pepper.
  7. Simmer for 3-4 minutes until the sauce thickens slightly.
  8. Stir in Parmesan cheese until melted.
  9. Return shrimp to the skillet and add cooked pasta.
  10. Toss everything together and garnish with fresh parsley before serving.
