Ingredients

- 2 tbsp butter, melted
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté for 3 minutes.
- Add shrimp and cook until pink, about 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Add chopped kale, salt, and black pepper. Simmer for 10 minutes.
- Slice the bread, brush with melted butter, and toast until golden.
- Serve the soup hot with garlic bread on the side.
