Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups kale, chopped
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 loaf crusty bread
  • 2 tbsp butter, melted

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté for 3 minutes.
  3. Add shrimp and cook until pink, about 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add chopped kale, salt, and black pepper. Simmer for 10 minutes.
