- 8 oz fettuccine
- 1 lb shrimp, peeled and deveined
- 2 roasted red peppers, chopped
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- Cook fettuccine according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same pan, add roasted red peppers and cook for 2 minutes.
- Pour in heavy cream and stir to combine. Simmer for 3 minutes.
- Return shrimp to the pan and add cooked fettuccine. Toss to coat.
- Sprinkle with Parmesan cheese, salt, black pepper, and red pepper flakes. Serve immediately.
