Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried parsley

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink, about 2 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, melt butter. Add mushrooms and garlic, sautéing until mushrooms are tender.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
  5. Add cooked shrimp and pasta to the skillet. Toss to coat evenly.
  6. Season with salt, pepper, and dried parsley. Serve hot.
