Description
A creamy and flavorful pasta dish with shrimp and cheesy spinach.
Ingredients

- 8 oz penne pasta
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
Instructions
- Cook penne pasta according to package instructions. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
- Add shrimp to the skillet and cook until pink, about 3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and bring to a simmer. Stir in mozzarella and parmesan cheese until melted.
- Return shrimp and cooked pasta to the skillet. Toss to coat evenly with the sauce.
- Season with salt, black pepper, and red pepper flakes if using. Serve hot.
Notes
- Use fresh spinach for best texture.
- Adjust red pepper flakes for more or less heat.
- Substitute half-and-half for a lighter version.
