- 8 oz pasta: your choice of shape
- 1 lb shrimp: peeled and deveined
- 2 cups butternut squash: cubed
- 2 tbsp olive oil
- 3 cloves garlic: minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/4 cup Parmesan cheese: grated
- 2 tbsp fresh parsley: chopped
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute.
- Add butternut squash to the skillet. Cook for 8-10 minutes until tender.
- Season shrimp with salt, black pepper, and red pepper flakes. Add to the skillet and cook for 3-4 minutes until pink.
- Combine cooked pasta with the shrimp and squash mixture. Toss gently.
- Garnish with Parmesan cheese and fresh parsley before serving.
