Description

A quick and flavorful dish combining shrimp, broccoli, and orzo pasta with a bright lemon finish.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Cook orzo according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
  3. Add shrimp and cook for 2 minutes per side until pink.
  4. Add broccoli florets and cook for 3 minutes until tender.
  5. Stir in cooked orzo, lemon juice, zest, salt, and pepper.
  6. Sprinkle with parmesan cheese and parsley before serving.
