8 oz pasta: cooked al dente
1 lb shrimp: peeled and deveined
1 bunch asparagus: trimmed and cut into 2-inch pieces
2 cloves garlic: minced
1 lemon: zested and juiced
2 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
2 tbsp parsley: chopped
Instructions
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a large pan over medium heat. Add shrimp, garlic, salt, and pepper. Cook for 2 minutes per side until pink. Remove shrimp and set aside.
In the same pan, add asparagus and cook for 3-4 minutes until tender.
Return shrimp to the pan. Add cooked pasta, lemon zest, and lemon juice. Toss to combine.
