- 8 oz pasta: your choice of shape
- 1 lb shrimp: peeled and deveined
- 1 bunch asparagus: trimmed and cut into 1-inch pieces
- 4 oz cream cheese: softened
- 2 cloves garlic: minced
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes: optional
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
- Add shrimp and cook for 2 minutes per side until pink. Remove shrimp from the skillet.
- In the same skillet, add asparagus and cook for 3 minutes until tender-crisp.
- Reduce heat to low. Add cream cheese and chicken broth, stirring until smooth.
- Return shrimp to the skillet. Stir in Parmesan cheese, salt, pepper, and red pepper flakes.
- Add cooked pasta and toss to coat evenly. Serve warm.
Notes
- Use full-fat cream cheese for the creamiest texture.
- Substitute vegetable broth for chicken broth to make it vegetarian.
- Add extra red pepper flakes for more heat.
