8 lasagna noodles, cooked al dente
1 lb shrimp, peeled and deveined
2 cups Alfredo sauce
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup shredded mozzarella cheese
2 tbsp olive oil
Instructions
Preheat oven to 375°F (190°C).
Cook lasagna noodles according to package instructions, then drain and lay flat on a clean surface.
Heat olive oil in a pan over medium heat. Add shrimp and cook until pink, about 3 minutes per side. Remove from heat and chop into small pieces.
In a bowl, mix ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
Spread a thin layer of Alfredo sauce on the bottom of a baking dish.
Spread the ricotta mixture evenly over each lasagna noodle. Top with chopped shrimp.
Roll up each noodle tightly and place seam-side down in the baking dish.
Pour remaining Alfredo sauce over the roll-ups and sprinkle with mozzarella cheese.
Bake for 20 minutes, or until cheese is bubbly and golden.
Let cool for 5 minutes before serving.
Notes
Use fresh shrimp for the best flavor.
You can substitute Alfredo sauce with a homemade version if preferred.
For a lighter version, use low-fat ricotta and mozzarella.
