Description
Shrimp Alfredo Lasagna Roll-Ups are a delicious twist on classic lasagna. Tender pasta sheets are rolled with a creamy shrimp and Alfredo filling, then baked to perfection.

- 8 lasagna noodles, cooked al dente
- 1 lb shrimp, peeled and deveined
- 2 cups Alfredo sauce
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain and lay flat on a clean surface.
- Heat olive oil in a pan over medium heat. Add shrimp and cook until pink, about 3 minutes per side. Remove from heat and chop into small pieces.
- In a bowl, mix ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Spread a thin layer of Alfredo sauce on the bottom of a baking dish.
- Spread the ricotta mixture evenly over each lasagna noodle. Top with chopped shrimp.
- Roll up each noodle tightly and place seam-side down in the baking dish.
- Pour remaining Alfredo sauce over the roll-ups and sprinkle with mozzarella cheese.
- Bake for 20 minutes, or until cheese is bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- Use fresh shrimp for the best flavor.
- You can substitute Alfredo sauce with a homemade version if preferred.
- For a lighter version, use low-fat ricotta and mozzarella.
