- 2 cups white beans, soaked overnight
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 4 slices turkey bacon, chopped
- Heat olive oil in a large pot over medium heat.
- Add turkey bacon and cook until crisp. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic, thyme, rosemary, and bay leaf. Cook for 1 minute.
- Drain and rinse soaked white beans, then add them to the pot.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes or until beans are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with crispy turkey bacon.
