Ingredients

  • 2 lbs chicken thighs (bone-in, skin-on)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown chicken thighs for 5 minutes per side. Remove and set aside.
  3. Sauté onion, carrots, and celery for 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Return chicken to the pot. Add broth, bay leaves, thyme, and rosemary.
  6. Simmer for 30 minutes until chicken is tender.
  7. Shred chicken, discard bones, and return meat to the pot.
  8. Season with salt and pepper. Serve hot.

Notes

  • For keto: Skip carrots and add zucchini.
  • For low calorie: Remove chicken skin before cooking.
  • Freezes well for up to 3 months.
