Ingredients

  • 2 cups dried white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp fresh thyme, chopped
  • 1 bay leaf
  • 4 slices turkey bacon, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Add onion, carrots, celery, and garlic. Cook until softened.
  4. Drain soaked beans and add them to the pot.
  5. Pour in vegetable broth and add thyme and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Season with salt and pepper.
  8. Remove bay leaf before serving.
