- 2 cups dried white beans, soaked overnight
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp fresh thyme, chopped
- 1 bay leaf
- 4 slices turkey bacon, chopped
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add turkey bacon and cook until crispy.

- Drain soaked beans and add them to the pot.
