Description

Delicious red velvet cheesecake truffles perfect for Valentine’s Day or any special occasion.

Ingredients

Scale
  • 1 1/2 cups red velvet cake crumbs
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Sprinkles (optional)

Instructions

  1. Mix cake crumbs, cream cheese, powdered sugar, and vanilla in a bowl until smooth.
  2. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  3. Freeze the balls for 30 minutes.
  4. Melt chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds.
  5. Dip each ball into the melted chocolate using a fork, then place back on the parchment paper.
  6. Add sprinkles if desired.
  7. Let the truffles set at room temperature or refrigerate for 15 minutes.

Notes

  • Store truffles in an airtight container in the refrigerator for up to 5 days.
  • For a richer flavor, use dark chocolate instead of semi-sweet.
  • If the mixture is too sticky, chill it for 10 minutes before rolling.
