These pumpkin sugar cookies are soft, chewy, and packed with real pumpkin flavor. A perfect fall baking recipe for Halloween, Thanksgiving, or cozy weekends at home.
Ingredients
1 1/2 cups sugar (plus more for rolling)
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
14 tbsp unsalted butter (room temp)
2 tsp vanilla extract
1 egg yolk
1/2 cup 100% pure pumpkin purée
Instructions
1. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
2. Mix butter and sugar until light and fluffy using a mixer on medium speed.
3. Add egg yolk, vanilla, and pumpkin purée. Mix until smooth.
4. Slowly add the flour mixture with mixer on low. Scrape the bowl as needed.
5. Preheat oven to 350°F. Refrigerate dough for 20 minutes.
6. Roll dough into 1-inch balls. Roll in sugar and place on lined baking sheet. Slightly flatten.
7. Bake for 15 minutes, rotating pan halfway. Let cool 2 mins on tray, then move to rack.
Notes
Chilling the dough is key for best texture.
