Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp pumpkin spice
- 1/4 tsp salt
- 2 large eggs
- 1/3 cup granulated sugar
- 1/2 tsp vanilla extract
- 1/2 cup unsalted butter, melted and cooled
- 1 tbsp powdered sugar for dusting
Instructions
- Preheat oven to 375°F (190°C). Grease a madeleine pan.
- Whisk flour, baking powder, pumpkin spice, and salt in a bowl.
- Beat eggs and sugar until pale and thick. Mix in vanilla.
- Gently fold dry ingredients into egg mixture.
- Add melted butter and mix until just combined.
- Spoon batter into molds, filling 3/4 full.
- Bake 10-12 minutes until edges are golden.
- Cool in pan 2 minutes, then transfer to a rack.
- Dust with powdered sugar before serving.
Notes
- Chill batter 30 minutes for more pronounced humps.
- Store in an airtight container up to 3 days.
- Freeze unbaked batter for up to 1 month.
