1/2 cup granulated sugar (topping)

1/2 cup brown sugar (topping)

1/4 cup chopped pecans (topping)

1 1/2 cups very hot water


Instructions

1. Preheat oven to 350°F (175°C).

2. In a medium bowl, stir together flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves.

3. In a separate bowl, mix pumpkin puree, milk, melted butter, and vanilla until combined.

4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.

5. Spread the batter into an 8-inch casserole dish with high sides.

6. In another bowl, mix granulated sugar, brown sugar, and chopped pecans for the topping.

7. Sprinkle the topping evenly over the batter.

8. Pour the hot water evenly over the top—do not stir.

9. Bake for 40 minutes or until the middle is set. Place on a baking sheet in case of overflow.

10. Cool for 5–10 minutes before serving. Top with extra pecans and vanilla ice cream if desired.

Notes

For deeper flavor, use fresh pumpkin puree instead of canned.
