Description
Creamy no-bake Pumpkin Cream Cheese Truffles made with pumpkin puree, cream cheese, and pumpkin spice. Rolled in sugar and topped with chocolate chip stems, these festive truffles are perfect for fall gatherings and Thanksgiving dessert tables.
Ingredients
1 tablespoon butter
4 ounces cream cheese, softened at room temperature
1/2 cup canned pumpkin puree
1 (14-ounce) can sweetened condensed milk
1 1/2 teaspoons pumpkin pie spice
1/2 cup graham cracker crumbs
1/3 cup white chocolate chips
Orange food coloring (optional)
Granulated sugar (for rolling)
Chocolate chips (for topping)
Instructions
1. Combine the butter, cream cheese, pumpkin, sweetened condensed milk, and pumpkin pie spice in a skillet over medium heat. Stir constantly until thickened and well-combined.
2. Stir in the graham crackers and white chocolate chips until melted and smooth. Add food coloring if desired.
3. Cook until the mixture releases from the sides and bottom of the pan. If unsure, cook slightly longer.
4. Pour the mixture over a greased baking sheet, spread evenly, and refrigerate for at least 2 hours or overnight.
5. Butter your hands and roll the chilled pumpkin cheesecake dough into small balls.
6. Roll the truffle balls in granulated sugar to coat.
7. Use a toothpick to make ridges on the truffles and top with a chocolate chip stem.
8. Serve immediately or refrigerate until ready to serve.
Notes
Butter your hands before rolling to prevent sticking.
Cook the mixture until thickened for best texture.
Truffles are best served chilled and can be made a day in advance.
