- 1 1/2 cups crushed pink sugar cookies
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/2 cup pink sugar cookie crumbs (for topping)
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- Mix crushed cookies and melted butter. Press into the pan to form the crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour filling over the crust. Sprinkle remaining cookie crumbs on top.
