Delicious pink lemonade cheesecake squares perfect for Valentine’s Day or any special occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 tbsp pink lemonade concentrate
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup heavy cream
  • Pink food coloring (optional)

Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a square baking pan.
  3. Bake crust for 10 minutes. Let cool.
  4. Beat cream cheese and 1/2 cup sugar until smooth.
  5. Add lemonade concentrate, vanilla, eggs, and heavy cream. Mix well.
  6. Add pink food coloring if desired.
  7. Pour filling over crust. Bake for 35-40 minutes.
  8. Let cool completely before cutting into squares.

Notes

  • Chill for at least 2 hours before serving.
