- 4 large tomatoes
- 1 cup cooked pasta
- 1/4 cup pesto sauce
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the tomatoes and scoop out the insides.
- Mix the cooked pasta with pesto and parmesan cheese.
- Stuff the tomatoes with the pasta mixture.
- Drizzle olive oil over the tomatoes and season with salt and pepper.
- Bake for 15-20 minutes until the tomatoes are tender.
Notes
- Use firm tomatoes to prevent them from collapsing.
- You can add cooked chicken or shrimp for extra protein.
