This Peach and Burrata Salad is the perfect summer dish, combining juicy peaches, fresh cherries, creamy burrata, and a herby vinaigrette. It’s bright, refreshing, and easy to make.

Ingredients

    • 1 ½2 cups cherry tomatoes, halved if large

    • 23 ripe peaches, sliced into wedges

    • 1 cup pitted fresh cherries

    • 8 oz burrata cheese, at room temperature

    • ¼ cup toasted pumpkin seeds or other seeds/nuts

    Vinaigrette:

    • ½ cup extra virgin olive oil

    • ¼ cup balsamic  vinegar

    • 1 tbsp honey

    • ½ shallot, finely chopped

    • 1 clove garlic, grated

    • 1 tsp lemon zest

    • ¼ cup chopped fresh basil

    • 2 tbsp chopped fresh oregano

    • 1 tbsp chopped fresh dill

    • 1 tbsp chopped fresh thyme

    • Red pepper flakes, kosher salt, black pepper to taste

Instructions

  • In a glass jar, whisk all vinaigrette ingredients until smooth. Adjust seasoning.

  • In a large bowl, toss tomatoes, peaches, and cherries with ⅓ of the vinaigrette. Let sit 15 minutes or up to 4 hours chilled.

  • Transfer to serving dish. Tear burrata over the top.

  • Drizzle remaining vinaigrette. Top with pumpkin seeds and extra herbs.

 

  • Serve with toasted bread or as a side to grilled meats.

Notes

  • Use ripe but firm peaches for best texture.

  • Substitute cherries with strawberries or nectarines.

 

  • Chill the salad if prepping ahead, but serve burrata at room temperature.
