Description
This Peach and Burrata Salad is the perfect summer dish, combining juicy peaches, fresh cherries, creamy burrata, and a herby vinaigrette. It’s bright, refreshing, and easy to make.
Ingredients
1 ½–2 cups cherry tomatoes, halved if large
2–3 ripe peaches, sliced into wedges
1 cup pitted fresh cherries
8 oz burrata cheese, at room temperature
¼ cup toasted pumpkin seeds or other seeds/nuts
Vinaigrette:
½ cup extra virgin olive oil
¼ cup balsamic vinegar
1 tbsp honey
½ shallot, finely chopped
1 clove garlic, grated
1 tsp lemon zest
¼ cup chopped fresh basil
2 tbsp chopped fresh oregano
1 tbsp chopped fresh dill
1 tbsp chopped fresh thyme
Red pepper flakes, kosher salt, black pepper to taste
Instructions
In a glass jar, whisk all vinaigrette ingredients until smooth. Adjust seasoning.
In a large bowl, toss tomatoes, peaches, and cherries with ⅓ of the vinaigrette. Let sit 15 minutes or up to 4 hours chilled.
Transfer to serving dish. Tear burrata over the top.
Drizzle remaining vinaigrette. Top with pumpkin seeds and extra herbs.
Serve with toasted bread or as a side to grilled meats.
Notes
Use ripe but firm peaches for best texture.
Substitute cherries with strawberries or nectarines.
Chill the salad if prepping ahead, but serve burrata at room temperature.
