Ingredients

  • 1 cup fresh or frozen peas
  • 1 clove garlic
  • 1/4 cup fresh basil leaves
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 4 slices whole-grain bread, toasted

Instructions

  1. Blend peas, garlic, basil, Parmesan, olive oil, and lemon juice in a food processor until smooth.
  2. Season with salt and pepper.
  3. Spread the pea pesto evenly on toasted bread slices.
  4. Serve immediately.
