A festive orange-cardamom loaf perfect for Christmas. Moist, fragrant, and lightly spiced.
Ingredients

- 2 cups all-purpose flour: sifted
- 1 cup sugar: granulated
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cardamom: ground
- Zest of 1 orange
- 1/2 cup orange juice: freshly squeezed
- 1/2 cup yogurt: plain
- 1/2 cup vegetable oil
- 2 eggs: large
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F. Grease a loaf pan and line it with parchment paper.
- In a bowl, whisk flour, sugar, baking powder, baking soda, salt, and cardamom.
- In another bowl, mix orange zest, orange juice, yogurt, oil, eggs, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the pan. Bake for 50-55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.

- Store in an airtight container for up to 3 days.
- Drizzle with glaze if desired.
