- 1 lb shrimp, peeled and deveined
- 1 cup orzo
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 2 cups vegetable broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic and onion. Cook until softened, about 3 minutes.
- Add bell pepper, zucchini, and cherry tomatoes. Cook for 5 minutes.
- Stir in orzo and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes.
- Add shrimp, salt, and pepper. Cook until shrimp are pink, about 5 minutes.
- Sprinkle with Parmesan cheese and parsley before serving.
Notes
- Use fresh shrimp for best results.
- Substitute chicken broth if vegetable broth is unavailable.
- Add a pinch of red pepper flakes for extra heat.
