  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken breasts and cook until browned on both sides, about 5 minutes per side.
  3. Remove chicken and set aside.
  4. In the same pot, add garlic, rice, lemon zest, oregano, salt, and pepper. Stir for 1 minute.
  5. Pour in chicken broth and lemon juice, then bring to a boil.
  6. Return chicken to the pot, cover, and reduce heat to low.
  7. Simmer for 20 minutes or until rice is tender and chicken is cooked through.
  8. Garnish with fresh parsley before serving.

  • For a keto version, replace rice with cauliflower rice.
