- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups baby spinach
- 1 tablespoon lemon juice
- 2 slices turkey bacon, chopped (optional)
- Heat olive oil in a large pot over medium heat.
- Add garlic, onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in vegetable broth, white beans, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add baby spinach and lemon juice. Cook for 2 minutes until spinach wilts.
- If using turkey bacon, cook separately and sprinkle on top before serving.
Notes
- For a creamier texture, blend half of the soup before adding spinach.
- Store leftovers in an airtight container for up to 3 days.
