Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 1/2 cup sour cream
  • 8 oz egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until soft. Add mushrooms and cook until tender.
  3. Stir in beef broth, Worcestershire sauce, Dijon mustard, and paprika. Bring to a simmer.
  4. Add egg noodles and cook until al dente, about 8 minutes.
  5. Return beef to the pot. Stir in sour cream until well combined.
  6. Season with salt and pepper. Garnish with fresh parsley before serving.

Notes

  • Use a good quality beef broth for the best flavor.
  • If the sauce is too thick, add a splash of water or broth.
  • Substitute Greek yogurt for sour cream if preferred.
