A simple and nutritious one-pot bean soup perfect for meal prep. Packed with protein and fiber, this soup is hearty and easy to make.

Ingredients

  • 2 cups dried beans (any variety)
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 cups water

Instructions

  1. Rinse the beans and soak them overnight. Drain before using.
  2. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Add garlic, cumin, and paprika. Stir for 1 minute.
  4. Add soaked beans, vegetable broth, diced tomatoes, bay leaf, and water. Bring to a boil.
  5. Reduce heat and simmer for 1 hour or until beans are tender.
  6. Remove bay leaf. Season with salt and pepper.
  7. Serve hot or store in meal prep containers.

  • Soaking beans overnight reduces cooking time.
