- 1 pound dried white beans
- 8 cups water
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 slices turkey bacon, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 teaspoon dried thyme
- Rinse the beans and soak them overnight in water.
- Drain the beans and place them in a large pot with 8 cups of water.
- Add the onion, carrots, celery, garlic, turkey bacon, salt, pepper, bay leaf, and thyme to the pot.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until the beans are tender.
- Remove the bay leaf before serving.
Notes
- Soaking the beans overnight reduces cooking time.
- For extra flavor, add a ham bone or smoked turkey leg.
- Store leftovers in the fridge for up to 3 days.
