A hearty and traditional bean soup made from scratch, perfect for a comforting meal.

Ingredients

  • 1 pound dried white beans
  • 8 cups water
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 slices turkey bacon, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 teaspoon dried thyme

Instructions

  1. Rinse the beans and soak them overnight in water.
  2. Drain the beans and place them in a large pot with 8 cups of water.
  3. Add the onion, carrots, celery, garlic, turkey bacon, salt, pepper, bay leaf, and thyme to the pot.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until the beans are tender.
  5. Remove the bay leaf before serving.

Notes

  • Soaking the beans overnight reduces cooking time.
  • For extra flavor, add a ham bone or smoked turkey leg.
  • Store leftovers in the fridge for up to 3 days.
