1 cup graham cracker crumbs
1/4 cup powdered sugar
1/2 cup finely chopped strawberries
1 tsp vanilla extract
12 oz white chocolate, melted
1 tbsp coconut oil
Red food coloring (optional)

Instructions
Mix cream cheese, graham cracker crumbs, powdered sugar, strawberries, and vanilla in a bowl until well combined.
Roll the mixture into small balls (about 1 inch diameter) and place on a parchment-lined tray.
Freeze for 30 minutes to firm up.
Melt white chocolate with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
Add red food coloring if desired for a pink hue.
Dip each cheesecake ball into the melted chocolate using a fork, letting excess drip off.
Return to the tray and add sprinkles immediately before the chocolate sets.
Refrigerate for 1 hour before serving.
