Ingredients

  • 16 large white mushrooms, cleaned and stems removed
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup cream cheese
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until soft.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, cream cheese, bell peppers, salt, black pepper, and thyme.
  4. Add the sautéed onion and garlic to the mixture, stir well.
  5. Stuff each mushroom cap with the filling.
  6. Place the stuffed mushrooms on a baking sheet and bake for 20 minutes.
  7. Garnish with fresh parsley before serving.
