Delicious plant-based sausage rolls perfect for celebrating the New Year with a healthy twist.
Ingredients

- 1 cup mushrooms, finely chopped
- 1 cup walnuts, crushed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 sheet puff pastry, thawed
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan and sauté onions and garlic until soft.
- Add mushrooms, walnuts, smoked paprika, thyme, salt, and pepper. Cook for 5 minutes.
- Roll out the puff pastry and cut into rectangles.
- Spoon the filling onto the pastry and roll tightly.
- Place on a baking tray and bake for 20-25 minutes until golden.
Notes
- Use gluten-free puff pastry if needed.
- Store leftovers in an airtight container for up to 3 days.
