Description

These New Year Pistachio Date Energy Balls are a healthy, no-bake snack packed with natural sweetness and energy-boosting ingredients.


Ingredients

  • 1 cup pitted dates, soaked
  • 1/2 cup pistachios, shelled
  • 1/4 cup almond butter
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp shredded coconut, for rolling

Instructions

  1. Soak dates in warm water for 10 minutes, then drain.
  2. Add dates, pistachios, almond butter, chia seeds, vanilla, and salt to a food processor.
  3. Pulse until mixture forms a sticky dough.
  4. Roll dough into small balls.
  5. Coat each ball in shredded coconut.
  6. Refrigerate for 30 minutes before serving.
