- 1 cup pitted dates, soaked
- 1/2 cup pistachios, shelled
- 1/4 cup almond butter
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 2 tbsp shredded coconut, for rolling
Instructions
- Soak dates in warm water for 10 minutes, then drain.
- Add dates, pistachios, almond butter, chia seeds, vanilla, and salt to a food processor.
- Pulse until mixture forms a sticky dough.
- Roll dough into small balls.
- Coat each ball in shredded coconut.
- Refrigerate for 30 minutes before serving.
Notes
- Store in an airtight container for up to 2 weeks.
- For a nut-free version, replace pistachios with sunflower seeds.
- Adjust sweetness by adding more or fewer dates.
