Description

Crispy mini potato skins stuffed with cheese and Turkey Bacon, perfect for New Year celebrations.


Ingredients

Scale
  • 12 small potatoes: washed and scrubbed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked Turkey Baco: crumbled
  • 1/4 cup sour cream
  • 2 tbsp chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut potatoes in half and scoop out the flesh, leaving a thin layer inside the skins.
  3. Toss potato skins with olive oil, salt, and pepper.
  4. Place skins on a baking sheet and bake for 15 minutes until crispy.
  5. Remove from oven and fill each skin with shredded cheddar cheese and Turkey Bacon.
  6. Bake for another 5 minutes until cheese melts.
  7. Top with sour cream and green onions before serving.

Notes

  • Use small Yukon Gold or red potatoes for best results.
  • For a vegetarian version, omit bacon and add sautéed mushrooms.
  • Serve immediately for the crispiest texture.
