Crispy mini potato skins stuffed with cheese and Turkey Bacon, perfect for New Year celebrations.
Ingredients

- 12 small potatoes: washed and scrubbed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked Turkey Baco: crumbled
- 1/4 cup sour cream
- 2 tbsp chopped green onions
Instructions
- Preheat oven to 400°F (200°C).
- Cut potatoes in half and scoop out the flesh, leaving a thin layer inside the skins.
- Toss potato skins with olive oil, salt, and pepper.
- Place skins on a baking sheet and bake for 15 minutes until crispy.
- Remove from oven and fill each skin with shredded cheddar cheese and Turkey Bacon.
- Bake for another 5 minutes until cheese melts.
- Top with sour cream and green onions before serving.
Notes
- Use small Yukon Gold or red potatoes for best results.
- For a vegetarian version, omit bacon and add sautéed mushrooms.
- Serve immediately for the crispiest texture.
