  • 1 pound dried navy beans, rinsed and sorted
  • 6 cups water
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth

Instructions

  1. Soak the navy beans in water overnight. Drain and rinse before using.
  2. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  3. In the same pot, sauté the onion, carrots, and celery until softened, about 5 minutes.
  4. Add the garlic, bay leaf, thyme, salt, and pepper. Cook for 1 minute.
  5. Add the soaked beans, vegetable broth, and water. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 1.5 hours, or until beans are tender.
  7. Remove the bay leaf. Using a spoon, mash some of the beans to thicken the soup.
  8. Stir in the cooked turkey bacon. Adjust seasoning if needed.
  9. Serve hot.

Notes

  • For extra flavor, add a ham bone or smoked turkey leg while simmering.
  • Soaking the beans reduces cooking time and improves digestibility.
  • Store leftovers in the fridge for up to 4 days.
