Instructions

  1. Drain and rinse the soaked navy beans.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onions, carrots, celery, and garlic. Cook until softened.
  4. Add turkey bacon and cook until slightly crispy.
  5. Stir in navy beans, vegetable broth, thyme, and bay leaf.

  7. Season with salt and pepper to taste.
  8. Remove bay leaf before serving.
